Hello there! How was your weekend?
I mentioned this in my meal planning post, but for the last few weeks, I have been making all of our lunches and breakfasts for the week on my weekend. It does take some time out of my day, but it has been a lifesaver, let me tell you! It is so convenient. I don’t have to think about what I am going to make or worry about running out of time before work. We just go in the fridge, grab one of the items and go. I actually didn’t do it the week of Thanksgiving because my sister was in town and I ended up having split days off at work. That week, my eating was a mess; so we are back to making it once a week.
Our lunches vary quite a bit, but our breakfasts have been different flavors of steel cut oats. I bought a bag of steel cut oats at Sprouts a few months ago. I quickly discovered that they are much different than regular oatmeal and actually take a lot of time to cook. Before doing this meal plan, I did not have that kind of time in the morning. They got shoved into the back of the pantry and forgotten about. Then I learned you could make them in the crockpot, and we have been making them every week since!
Steel cut oats do have a different texture than regular oatmeal, so that took some getting used to. But, they are much healthier for you and very filling.
I like to find different flavor ideas from Pinterest, but I always use the same base: 2 cups of steel cut oats and 4 cups of water in the crockpot on high for 2 hours. I tried recipes with different combinations of liquid or time, and this is just what I have found works best. It also works well with 6 cups of water and 3 cups of oats; I tried that this week. I don’t recommend leaving them in overnight like other recipes suggest. Mine was BURNT by the time I woke up– like black burnt.
